Cyprus is a restaurant located in Highlands, North Carolina, and dedicated to the philosophy that some of the greatest, most rewarding food to be had is the great peasant food of the world. Therefore, we take our cues about our cuisine from the precepts we learn about traditional cuisines.
We feature a fairly broad house menu, plus a different REGIONAL MENU each night of the week. As an example, each Tuesday night is Thai night at Cyprus, and each Saturday night features South American cuisine. All of our house entrees are priced at $19.95, with a few exceptions. The specials are $23.95.
The name Cyprus is derived from our love of the idea of a cultural crossroads in food. The Island of Cyprus is located at the heart of ancient and modern trade, and therefore a perfect model. Additionally, Cyprus is the ancient source of copper, our primary design element. Why copper? The beauty, depth, complexity, and richness of copper contrasts with it's status as a common, rather than a precious metal. Likewise, we strive to explore and illuminate the "common", but often spectacular, cuisines of the world.
All of our food is made by hand, from our peasant bread, to our desserts, and everthing in between. A great deal of time and attention will be spent on your cuisine for the evening, be assured. We believe that as our guest, you should enjoy the fruits of our hospitality and our insights about food.
Walter Shepheardhas been the chef de cuisine from spring 2006, and quite frankly has amazed everyone as an engineer of flavors. Stephanie Figel manages the restaurant. Kristina Donikian lends an air of elegance and sophistication to the ding experience here. Wow! Knowledgable and superbly competant, Holly Ryan keeps the Friday late nighters in line. Justin Neal provides exceptional service. To be clear, nobody builds a mental picture of food for customers better than Jessica. Of course, without Ana and Javier we would all be lost. The staff of Cyprus are the most intelligent, gifted people in the galaxy!
Come in to have a great time. Remember, the music will be loud at times, and the food can be weird if you don't have an open mind. Everything we do, we do with passion and love. If a potential customer doesn't get it, we will recommend a restaurant in town more to thier liking. However, once you come and dine with us, or stay up late with us at the wine bar, you WILL get it!
We are open seven night a week, 5pm-11pm, May through October, and 5pm-10pm November through April. We look forward to seeing you here! Remember Friday night is always a big party. Enjoy!
